About

Every starter behaves differently, and memory is a poor instrument. Levain Ledger is a private journal for the jar on your counter: you write down what you see, and it tells you what that means. Log the reading, not the guess Each entry takes a few seconds. Room and starter temperature, pH, rise height, hours to peak, how long it held at the top, a vigour score, total weight — record everything you measured, or only the two things you actually checked. The app never invents a value to fill a gap. A verdict instead of a number Every jar gets a status — Active, Needs attention, Off, or Keep watching — with the reason spelled out: pH has drifted too low, the jar is running hot, or the rise has stalled. If you are starting from flour and water, Levain Ledger tracks the four stages a new starter passes through — dormant, false rise, acidifying, then mature — and only calls it mature after two consecutive good readings, so you do not bake on a promising day three. Seven calculators Feeding ratios that correctly account for the flour and water already inside your starter, not just what you add. Hydration conversions in all four directions. Time rescaling for a warmer or colder kitchen. Water temperature for a target dough temperature. Baker's percentages for scaling a formula, levain included. Where to put the rubber band. And the one people ask for: given the temperature and your last rise, it estimates when the jar will peak, and can remind you beforehand. Charts that show the shape of it Dual-axis trend lines for rise and pH over any window, with your reference bands drawn behind them. Watch the curve shift as the starter strengthens. Export a PDF report for a jar, or for everything, and keep it or share it. Tasks on a schedule that knows about hours Feeding twice a day does not fit a calendar built for days. Reminders work in hours, can be pinned to a jar, and reschedule themselves after you complete them. Put a jar in the fridge and its feeding task pauses, along with the maths. One jar, or a shelf of them Each jar keeps its own schedule, history, and reference ranges. The presets match the flour — whole wheat, white bread, rye, or something else — and every range can be widened or tightened for a jar that runs differently. Attach a jar photo when you want a quicker way to tell them apart in a list. A short guide, kept short An illustrated walkthrough covers the first ten days: what is supposed to happen, what a false rise looks like, and when to stop worrying. It is a reference, not a course — you can read it in two minutes and get back to the jar. A pantry ledger Flours and water sources, with protein content and how you dechlorinate. Tools and consumables — pH calibration solution, filters, batteries — with their own intervals. No account, no sign-in, no servers. Everything lives on your device, and the app collects nothing. Three themes, including a dark one for a dim kitchen at 6am.
