Crumb is a formula calculator for sourdough and home bakers. Enter a formula in grams or in percentages, and the other column updates as you go.
■ Features • Baker's percentages and grams, editable in either direction • Total hydration that counts the water in your levain and in wet add-ins such as egg, milk, butter and honey • Prefermented flour percentage, pinned at the top of the formula • Scale a batch by number of pieces and piece weight, or by total dough weight, with an optional loss percentage • A measuring sheet in grams, ounces or pounds • Water temperature for your desired dough temperature (DDT), with hand and mixer friction presets • Celsius or Fahrenheit
