AROUND YOUR DAY Tell it when you want to eat and when you have time: afternoons and evenings, mornings and evenings, weekdays and weekends, or your own hours for each day. Mixing, balling and preheating land in those windows, and the long rests happen while you are out. If nothing fits, Pizza Wizard shows the smallest change that does, such as one pizza fewer, a slightly longer window or another style.

FIVE STYLES Neapolitan (AVPN), modern Neapolitan, New York, Detroit and Chicago deep dish, each with its own fermentation profiles, from same-day doughs to cold ferments over several days.

YEAST THAT FITS THE TIME Instant, active dry or fresh yeast, or sourdough, mixed directly or with a poolish or levain. The amount follows from the fermentation time and your temperatures, to a hundredth of a gram. Flours from Caputo, King Arthur and Le 5 Stagioni are built in, along with common flour types.

A TIMELINE TO FOLLOW Every step with its time, what to do and how the dough should look. Tick steps off as you go, and a reminder arrives when the next one is due. Running late? The plan tells you whether the dough is ahead or behind and when it will be ready.
